Officina Biological is a farm that produces superior category organic extra virgin olive oil obtained directly from olives and solely by mechanical processes from olives harvested in Italy.

Officina Biologica has an olive grove on the Altomente promontory (Cs) at 450 m above sea level in one of the most fertile areas in all of Calabria. The olive grove, planted for the first time in 1955, is located in an ideal hilly area where the sun and the humidity of the three rivers that cross the Altomonte territory are an important part in the production and yield of olives. Today the olive grove, integrated several times over time, is made up of 60% of the tondino variety, 30% of the leccino variety and 10% of the nocellara Messina variety.

Specialized technicians and operators make the most of the unique climatic conditions of the territory and take care of the olive grove daily in order to guarantee a product of the highest quality. For the harvest, which takes place between October and January, the spontaneous fall of the olives is not expected but the collection is carried out by combing or shaking in order to collect the olives at the right degree of ripeness and that do not come into contact with the ground. This particular precaution makes our oil of superior quality and has an important influence on the goodness of the oil.

This process together with a completely cold processing allows to produce a superior quality oil with an acidity degree of 0,04%.
