"Calabrian wild chicory" is a spontaneous herbaceous plant that flowers in uncultivated areas especially in the summer months but is also available in autumn.

Like all edible herbs, Calabrian wild chicory is a precious food, has many properties and brings notable benefits to the body. In addition to being rich in vitamins and mineral salts, it has a good quantity of: chicoric acid, useful for purifying and detoxifying the body (the typical bitter taste is due to the presence of this acid).

Calabrian cuisine has humble origins, but the wild chicory of the area is still widely used today. It brings a delicious flavor to soups and is really good boiled and sautéed in a pan with garlic and olive oil, perhaps with the addition of a hot chili pepper. The smaller leaves are very tender and can also be eaten raw in salads. It goes very well with all cheeses.
