Rosito ist der häufigste Pilz in der Sila-Hochebene. Es ist ein Edelpilz, auch wenn er nicht den Ruhm und die Popularität des Steinpilzes erreicht hat. Sie wächst im Spätsommer/Frühherbst am Rande von Laub- und Nadelwaldlichtungen. Sie ist leicht unter Zweinadel-Kiefern, der Pinus-Kiefer und der Daleppo-Kiefer zu finden, mit einer besonderen Vorliebe für das Wacholder-Unterholz.
Rosito, technisch Lactarius deliciosus, gehört zur Familie der Russulaceae. Und oft wird es beim Sammeln mit Pilzen der eigenen Familie verwechselt, die die gleiche Morphologie und Farbe haben, aber giftig und daher ungenießbar sind.
Es hat einen besonderen Geschmack, der zu scharfen neigt, mit einem pfeffrigen Nachgeschmack. Fruchtig. Er wird auch von den Sila-Gastronomen sehr geschätzt, die ihn auf dem Grill mit Speck oder auf jeden Fall auf hoher Flamme garen, um nicht zu viel Geschmack zu verlieren.
Silana Funghi Rositi-Pilze werden ausschließlich von Hand in Sila gesammelt und verarbeitet, wo das Unternehmen seinen Sitz hat.
