Getrocknete oder getrocknete Tomaten sind ein Lebensmittelprodukt, das durch Trocknen von Tomaten gewonnen wird, insbesondere aus einer Sorte mit wenig Wasser und einer einheitlichen Schale wie San Marzano.

In Kalabrien ist das Trocknen von Tomaten eine alte Tradition, die darin besteht, die im Sommer produzierten Produkte für den Verzehr im Winter zu konservieren. Auch dieses Produkt wird komplett von Hand hergestellt, aber vor allem erfolgt die Trocknung in der Sonne und ohne Hilfe von Öfen.
