In the Calabrian culinary tradition, slashing plays a very important role, formerly the dish of the poor. It is said that at the beginning of the nineteenth century the pasta factories collected the mixed residues of flour and bran from the milling of wheat from the ground, giving rise to a type of dark-colored pasta called, in fact, stroncatura. Today the pasta is made with 88% durum wheat semolina and water. Generally, the stroncatura is seasoned with typical ingredients of the peasant tradition, such as extra virgin olive oil, garlic, Calabrian chilli, anchovies and toasted bread crumbs, creating a very tasty first course, which contains all the flavors of Calabria, a real delicacy in menus of the most important Calabrian restaurants.
