Harvest method: Manual Vinification: The grapes are destemmed and left to macerate for 8-10 hours. After soft pressing, the free-run must obtained is clarified through cold static decantation, with the start of fermentation at a controlled temperature, until its completion.
Refinement: At the end of fermentation the wine is kept on the yeasts for approximately 1-2 months with subsequent refinement in steel, until bottling.
The bottled product is normally stored for approximately 15/20 days before being placed on the market
